Kamut is an ancient grain full of flavor and color. I like to use it for bread mixed with half Spelt flour as the two work well together in producing a light and tender loaf of bread because if you make bread with just Kamut flour, it will be heavier than a wheat bread. Kamut makes fabulously tender cookies, pancakes and pasta-I won't make whole wheat pasta because I think it looks too drab in color and my family turns their nose up at it! However, making pasta with Kamut looks more appetizing as it promotes a slight yellow tint and the taste is scrumptious-like a buttery-rich egg pasta.
