This is a fabulous dessert from my Wildflour cookbook that will have your guests thinking you spent a long time preparing it! The volumizing power of the Bosch french whips makes this dessert happen in just minutes!

In the Bosch(or DLX plastic bowl fitted with wire whips) beat until very, very soft peaks begin to form:

4 egg whites

then gradually add:

1 cup sugar(fructose and raw sugar will not work!)

whip this until stiff peaks form and then fold in gently:

1 T. cornstarch
1 t. vanilla(or 1/2 t. Fiori Di Sicilia for an extra special treat!)
2 t. white vinegar(must be white)

Mound this on a cornstarch dusted piece of parchment paper lined baking sheet. Bring up the sides a little higher than the center while shaping it into a circle.

Bake for 1 1/2 hours-2 hours and do not brown! The outside should feel crusty. Cool and then spread with filling:

1 cup freshly whipped cream
sliced strawberries, pineapple, kiwi fruit, bananas etc.

Serve immediately.

Serves 4-6. Can you believe how incredibly easy this is!!
