Testing for doneness:

To test for doneness, you can ‘tap’ on the loaf while it‘s in the pan-if it sounds hollow-it‘s done. This can take years of baking experience to find out as I‘ve tapped many a loaf to find out that it was still raw in the middle! For beginners, a sure fire way is to purchase an instant-read thermometer and poke it into the center of the loaf. It will be finished if it reads between 190-200 degrees.
