Milling Grain can be executed in several different ways. The most efficient and quickest way to mill flour is by using an electric Mill.
Electric Mills: Although there are a number of electric mills on the market today, we prefer to use the Nutrimill Grain Mill because it contains self-cleaning stainless steel burrs that explode any dry grain or bean(nothing oily like sunflower seeds, coffee beans or flax seeds) upon impact into a powdery-fine flour that is perfect for light and fluffy baked goods. It’s very easy to use and clean. The milling process only takes minutes to grind up to 5 pounds of grain. The Nutrimill is very fast and efficient with minimal clean up. Unlike other electric mills, you can turn the Nutrimill on or off during the milling process and it won’t jam up. The Nutrimill has 300 percent increase from fine to coarse. The coarse setting does not give a ‘corn meal’ but a larger flake to the bran for a more coarse flour. The finer setting is perfect for cakes and pastries. You can easily mill a few kernels of grain or up to 12 cups! The canister easily slides under the hopper and glides out with ease.
The Nutrimill grinds a beautiful powdery fine flour by exploding the grain or bean upon impact when it comes in contact with the stainless steel self-cleaning burrs.
There are some mills on the market that give a single grind which is usually an all-purpose medium type flour. If you like to bake pastries, breads and cookies then you will find the versatility of the different grinds on the Nutrimill to your advantage.
The Box type electric mills are usually less expensive but harder to get into as the motor is the lid. If you struggle with arthritis or carpal tunnel then you may find these types of mills harder to get in and out of. The Ultramill is made by LeQuip which carries a lifetime warranty through Kitchen Resource Bosch. This mill produces a medium fine grind from stainless steel burrs. The grind is not adjustable but is satisfactory for breads and cookies. If you plan to mill often, this mill will prove to be a bit more cumbersome to use on a daily basis since the lid is also the motor.
Attachment mills and flakers for stand mixers may be hard on the motor and produce a very coarse flour but the popular German made Family Grain Mill is the exception! It easily attaches to the Bosch Mixer and works effortlessly to grind any dry grain into a medium grind or coarse flour. (See Hand Mills below)
Stone Grinding Mills are preferred by some people and this will produce a coarser flour. The stones take some time and care to clean and sometimes these mills can be very heavy. Eventually the stone will need to be replaced. An advantage to a stone mill means having access to stone milled corn meal.
Hand Mills are becoming more popular with those that like to be prepared for an emergency or those that are simply living ‘off the grid’. We also like the American Made Country Living Mill which has steel burrs and a fly wheel. Creative types can attach this mill via a belt to a bicycle and pedal their flour! This mill also allows you to attach it to a motor. The Country Living Mill produces a nice medium fine flour for a hand milled flour that is perfect for breads and cookies.
The bottom line is to do your research and choose a mill that best suits your needs. There are some frauds and imitations out there so be careful-a life time warranty is only as good as the company’s reputation.
