The Recipe: Denise‘s Soft and Satiny Bread
This is my most requested bread and roll recipe! Many people gain success using this method when previously they could not. This versatile dough works well for dinner rolls, bread or cinnamon rolls.
Mill:
12 cups(5#) of hard white Spring Wheat = 18-20 cups of flour)
In Bosch mixer bowl place:
- 6 cups really warm water(115-130 degrees)
- ½ cup powdered milk, buttermilk powder or tofu white powder*
- 1/3 dry lecithin granules
- 3/4 cup olive, sunflower or safflower oil
- 1 cup honey or Agave Syrup
- 8 cups of the flour
- 5 Tablespoons SAF instant yeast
- 3 Tablespoons dough enhancer
- ½ cup vital gluten
Dump above ingredients into Bosch bowl.

Mix slightly in the Bosch until it looks like pancake batter-approximately 20 seconds on low.

Let this sponge until double approximately 15-30 minutes. Be careful, it may come up over the sides!

Then add: 3 Tablespoons Real Salt or salt of choice
Add enough of the remaining flour until the dough cleans the sides of the bowl. This will create a soft and moist dough that is slightly wet.

Stop and touch dough-if it is real wet, continue to add more flour until dough is spongy but not sticking all over your fingers. Begin to time the kneading on low for 5-7 minutes or until gluten is fully developed. May cover and let rise until double and gently deflate or immediately shape into greased pans, filling ¾ way full.
When ready to shape, roll dough out with a rolling pin or gently push out all air bubbles by slightly hand kneading. Shape into a log and cut into approximate shapes to fit pans(I use about 1 ½ pounds per loaf).

Cover and let rise until double(20-30 min.).


Bake in preheated 350 degree oven for 30 -35 minutes.
Makes 12-15 dozen rolls or four eight inch 1 ¾ pound loaves.

*Tofu white is an instant powdered dairy free tofu drink mix available from authorized Bosch Dealers.
